This hearty breakfast casserole features layers of frozen hash browns, savory breakfast sausage, and a mountain of melted cheddar cheese, all baked in a rich egg custard. It’s the perfect make-ahead dish for feeding a crowd, with a crispy top and gooey, satisfying center.

Ingredients

Scale
  • 1 lb Breakfast Sausage
  • 1 (30 oz) bag Frozen Shredded Hash Browns
  • 8 Large Eggs
  • 2 cups Whole Milk
  • 4 cups Shredded Cheddar Cheese
  • 1/2 cup Diced Yellow Onion
  • 1/2 cup Diced Green Bell Pepper (optional)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Paprika
  • Optional: Fresh chopped chives or parsley for garnish, sour cream, hot sauce

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Cook the sausage in a large skillet over medium-high heat, breaking it up, until browned and no longer pink (5-7 minutes). Transfer to a plate with a slotted spoon, leaving about 1 tablespoon of fat in the pan.
  3. In the same skillet, sauté the diced onion and bell pepper (if using) over medium heat until softened (3-4 minutes). Add to the plate with the sausage.
  4. In a large mixing bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika until frothy (about 1 minute).
  5. Spread the frozen hash browns evenly in the prepared baking dish. Top with the cooked sausage and sautéed vegetables. Pour the egg mixture evenly over the top.
  6. Sprinkle the shredded cheddar cheese over everything, covering completely.
  7. Cover the dish tightly with aluminum foil and bake for 35 minutes.
  8. Remove the foil and bake for another 15-20 minutes, until the top is deep golden brown and the center is set (slight jiggle like firm Jell-O).
  9. Let the casserole rest for at least 10 minutes before slicing and serving. Garnish with chives or parsley if desired.

Notes

Do not thaw the frozen hash browns; using them frozen prevents a soggy casserole. Let the casserole rest for at least 10 minutes after baking to set properly. For a make-ahead option, assemble the night before, cover, and refrigerate; bake as directed the next morning (you may need to add 5-10 minutes to the covered baking time).
