A quick and easy appetizer featuring warm, oozy brie topped with tart cranberries and fragrant rosemary honey. Perfect for holiday parties, casual dinners, or any gathering, this dish feels fancy but comes together in about 20 minutes.

Ingredients

Scale
  • 1 (8-ounce) wheel of brie cheese
  • 1/2 cup fresh or frozen cranberries
  • 1/4 cup honey
  • 2 sprigs fresh rosemary, plus extra for garnish
  • 1 tablespoon olive oil (optional)
  • Flaky sea salt, for finishing
  • Cracked black pepper, to taste (optional)
  • For serving: crusty bread, crackers, apple slices, or pear slices

Instructions

  1. Preheat your oven to 350°F (175°C). Take the brie out of the fridge and let it sit at room temperature for about 10 minutes.
  2. Make the rosemary honey: In a small saucepan over low heat, combine the honey and one sprig of rosemary. Warm gently for 3-4 minutes, stirring occasionally, until the honey is loose and fragrant. Remove from heat and let it sit.
  3. Prepare the brie: Place the brie in a small baking dish or oven-safe skillet. Using a sharp knife, score the top of the brie in a crosshatch pattern, about 1/4 inch deep.
  4. Add the cranberries and honey: Scatter the cranberries around and on top of the brie. Remove the rosemary sprig from the honey and discard. Drizzle the infused honey over the brie and cranberries. If using, drizzle the olive oil over the brie.
  5. Bake: Place the dish in the preheated oven and bake for 12-15 minutes, or until the brie is soft and puffed slightly. The cranberries should be softened.
  6. Finish and serve: Remove from the oven and let rest for 2-3 minutes. Sprinkle with flaky sea salt and cracked black pepper, if using. Garnish with fresh rosemary sprigs and extra cranberries. Transfer to a serving board and surround with crackers, bread, and fruit slices.

Notes

Don’t skip scoring the brie; it allows the honey to seep in. Watch the oven closely to avoid overbaking. Let the brie rest for 2-3 minutes before serving to prevent it from becoming too runny. For a dairy-free version, use a cashew-based vegan brie that melts well. The rosemary honey can be made ahead and actually gets more fragrant the next day.
