Ingredients

Scale
  • 1 pound ground beef (80/20 blend)
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth (low-sodium)
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh lime juice (about half a lime)
  • 1/2 cup sour cream (full-fat)
  • 2 tablespoons fresh lime juice (about one whole lime)
  • 1 teaspoon lime zest
  • 1 small garlic clove, minced to a paste
  • Pinch of salt
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce (iceberg or romaine)
  • 1 medium tomato, diced (seeds removed if desired)
  • 1/2 cup shredded Mexican blend cheese or crumbled queso fresco
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Make the lime crema first. In a small bowl, combine 1/2 cup sour cream, 2 tablespoons fresh lime juice, 1 teaspoon lime zest, 1 small garlic clove (minced to a paste), and a pinch of salt. Whisk until smooth. Taste and adjust with more lime if needed. Set aside.
  2. Prep your toppings: dice 1 medium tomato (remove seeds if desired), shred 1 cup lettuce, grate 1/2 cup cheese, and chop a handful of fresh cilantro. Place in small bowls for easy assembly.
  3. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and let it shimmer for about 30 seconds.
  4. Add the diced onion and cook for 2-3 minutes, stirring occasionally, until translucent and starting to soften. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Add the ground beef to the skillet. Break it up with a wooden spoon or spatula. Let it cook undisturbed for 2-3 minutes to develop a sear, then stir and continue cooking until mostly browned (about 5-6 minutes total). Drain excess fat if needed, leaving about 1 tablespoon in the pan.
  6. Add 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1/2 teaspoon chili powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir well to coat the beef. Cook for 1 minute until fragrant.
  7. Add 2 tablespoons tomato paste and stir into the beef. Cook for 1 minute. Pour in 1/4 cup beef broth and stir, scraping up any browned bits from the bottom. Let simmer for 2-3 minutes until the liquid has mostly reduced and the beef is moist but not soupy.
  8. Remove the skillet from heat and stir in 1 tablespoon fresh lime juice. Taste and adjust seasoning if needed.
  9. Warm the tortillas: Heat a dry skillet or comal over medium-high heat. Warm each tortilla for about 30 seconds per side until pliable with a few charred spots. Stack on a plate and cover with a clean kitchen towel to keep warm.
  10. Assemble the tacos: Place 2-3 tablespoons of seasoned beef down the center of each tortilla. Top with shredded lettuce, diced tomato, shredded cheese, and a generous drizzle of lime crema. Garnish with fresh cilantro and serve with lime wedges.

Notes

For best flavor, toast the cumin in the pan for 30 seconds before adding other ingredients. The lime crema can be made up to an hour ahead to let flavors meld. For a leaner option, use ground turkey or chicken with an extra tablespoon of oil. For dairy-free crema, use coconut yogurt or dairy-free sour cream. Leftover beef can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
