This quick cinnamon sugar apple crisp with oat crumble is the perfect weeknight dessert. Tender, cinnamon-spiced apples under a buttery, crunchy oat topping come together in under an hour for a warm, comforting treat.

Ingredients

Scale
  • 4 medium apples (about 600g or 1.3 lbs), peeled and sliced (Honeycrisp or Granny Smith recommended)
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (25g) light brown sugar, packed
  • 1 1/2 teaspoons ground cinnamon
  • 1 tablespoon (8g) cornstarch
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (90g) old-fashioned rolled oats
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (100g) light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (113g or 1 stick) unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, core, and slice apples into roughly 1/4-inch thick pieces. You should have about 4 cups of sliced apples.
  3. In a bowl, combine sliced apples with granulated sugar, brown sugar, cinnamon, cornstarch, lemon juice, and vanilla. Toss until every slice is coated. Let sit for 5 minutes.
  4. In a separate bowl, whisk together rolled oats, flour, brown sugar, cinnamon, and salt. Cut in cold butter cubes using a pastry cutter or two forks until mixture resembles coarse sand with some pea-sized butter pieces.
  5. Pour apple mixture into an ungreased 8×8-inch baking dish and spread evenly. Sprinkle oat crumble evenly over the top without pressing down.
  6. Place dish on a baking sheet. Bake for 35 to 40 minutes, until filling is bubbly around edges and topping is golden brown. If browning too quickly, tent with foil after 25 minutes.
  7. Let cool on a wire rack for at least 10 minutes before serving to allow filling to thicken.

Notes

Keep butter cold for a crispy topping. Let crisp rest 10 minutes after baking to thicken filling. Use a baking sheet to catch drips. For gluten-free, use 1-to-1 gluten-free flour blend and certified gluten-free oats. For vegan, use cold coconut oil or plant-based butter.
