A quick and easy Halloween treat that combines crunchy popcorn, melted white chocolate, and candy corn for a sweet and salty snack that comes together in under 15 minutes.

Ingredients

Scale
  • 8 cups popped popcorn (plain or lightly salted)
  • 12 ounces white chocolate chips
  • 1 cup candy corn
  • 1/2 cup candy pumpkins (optional)
  • 1/4 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil or vegetable oil (divided)
  • Flaky sea salt (optional)

Instructions

  1. Line your baking sheet with parchment paper, extending slightly over the edges for easy removal.
  2. Pop your popcorn if using kernels; you need about 8 cups. Remove any unpopped kernels.
  3. Spread the popcorn in an even layer on the prepared baking sheet.
  4. Sprinkle the candy corn and candy pumpkins evenly over the popcorn.
  5. Melt the white chocolate chips with 1/2 tablespoon of coconut oil in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth (about 1-2 minutes).
  6. Pour the melted white chocolate over the popcorn and candy mixture. Use a spatula to gently fold and toss until everything is coated.
  7. Spread the mixture back into an even layer on the baking sheet, pressing down gently.
  8. Melt the semi-sweet chocolate chips with the remaining 1/2 tablespoon of coconut oil in a separate bowl using the same microwave method.
  9. Drizzle the melted semi-sweet chocolate over the white chocolate-coated popcorn.
  10. While the chocolate is still wet, sprinkle a pinch of flaky sea salt over the top if desired.
  11. Let the bark set at room temperature for 30-45 minutes, or refrigerate for 15 minutes until firm.
  12. Break the bark into pieces with your hands. Store in an airtight container.

Notes

Avoid buttered popcorn as it can cause the chocolate to seize. Work quickly once chocolate is melted. For best results, make the bark a day ahead; flavors meld and texture stays crunchy. Store in an airtight container at room temperature for up to 1 week.
