mexican champurrado recipe - featured image

This cozy Mexican champurrado is a thick, warm, and comforting chocolate masa drink perfect for cold evenings. Made with simple ingredients like masa harina, Mexican chocolate, and cinnamon, it’s a naturally gluten-free treat that’s faster than you’d think.

Ingredients

Scale
  • 4 cups whole milk (or 3 cups milk and 1 cup water for a lighter version)
  • 1/3 cup masa harina (e.g., Maseca brand)
  • 1 tablet (about 3 ounces) Mexican chocolate, chopped (e.g., Ibarra or Abuelita)
  • 1/4 cup piloncillo, chopped (or substitute dark brown sugar)
  • 1 cinnamon stick (Mexican canela if available)
  • 1/4 teaspoon vanilla extract (optional, skip if chocolate contains vanilla)
  • Pinch of salt
  • 1 tablespoon unsalted butter (optional, for richness)
  • 1/2 teaspoon ground cinnamon (optional, for extra warmth)
  • Pinch of cayenne or ancho chili powder (optional, for a spicy kick)

Instructions

  1. In a small bowl, whisk together the masa harina with 1/2 cup of cold water until completely smooth. Set aside.
  2. Pour the milk (or milk-water mixture) into a medium saucepan. Add the cinnamon stick and pinch of salt. Heat over medium heat until steaming but not boiling, about 4 to 5 minutes.
  3. Add the chopped Mexican chocolate and piloncillo or brown sugar. Whisk gently as they melt into the warm milk, about 2 to 3 minutes, until fully incorporated.
  4. Reduce heat to low. Give the masa-water mixture a quick stir, then slowly pour it into the pot while whisking constantly. Continue whisking for a full minute until smooth.
  5. Cook over low heat, whisking occasionally, for about 8 to 10 minutes until the champurrado thickens to a consistency similar to thin pudding or heavy cream. Adjust thickness with milk or more simmering as needed.
  6. Remove the cinnamon stick. Stir in the vanilla extract (if using) and optional butter. Whisk to incorporate.
  7. Froth the champurrado by spinning a molinillo between your palms for 30 seconds or vigorously whisking for 20 seconds to create a frothy top.
  8. Serve immediately in mugs. Enjoy hot.

Notes

The biggest mistake is rushing the masa—always dissolve it in cold water first to avoid lumps. Watch your heat carefully to prevent scorching. Texture is personal; adjust masa harina for thickness. Champurrado tastes even better the next day as flavors meld. For dairy-free, use oat milk or canned coconut milk.
