These easy cranberry bliss blondies with white chocolate drizzle are a tribute to an accidental kitchen moment. They’re quick, simple, and unbelievably delicious—perfect for weeknights or holiday baking.

Ingredients

  • Unsalted butter, ½ cup (113g)
  • Light brown sugar, ¾ cup (150g), packed
  • Granulated sugar, ¼ cup (50g)
  • Large egg, 1, at room temperature
  • Vanilla extract, 1½ teaspoons
  • All-purpose flour, 1 cup (120g)
  • Baking powder, ½ teaspoon
  • Salt, ½ teaspoon
  • Dried cranberries, ¾ cup (90g)
  • White chocolate chips, ½ cup (90g) for the batter + ¼ cup (45g) for the drizzle
  • Optional: orange zest, 1 teaspoon
  • Coconut oil or vegetable oil, 1 teaspoon (for the drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides.
  2. Brown the butter: Place ½ cup unsalted butter in a small saucepan over medium heat. Swirl occasionally as it melts. It will foam, then the foam will subside, and brown specks will form at the bottom (about 5-7 minutes). Remove from heat immediately when it smells nutty and looks golden-brown. Pour into a medium mixing bowl to stop cooking. Let cool for 5 minutes.
  3. Combine the sugars and butter: Add packed brown sugar and granulated sugar to the warm browned butter. Whisk vigorously until the mixture looks like wet sand and has slightly thickened (about 1 minute).
  4. Add the egg and vanilla: Crack the room-temperature egg into the sugar-butter mixture. Add vanilla extract. Whisk until smooth and glossy (about 30 seconds).
  5. Mix the dry ingredients: In a separate small bowl, whisk together flour, baking powder, and salt.
  6. Combine wet and dry: Pour the flour mixture into the wet ingredients. Fold gently with a spatula until just combined. A few streaks of flour are okay—do not overmix.
  7. Fold in the mix-ins: Add dried cranberries and ½ cup white chocolate chips. Fold 4-5 times until evenly distributed. The batter will be thick and slightly sticky.
  8. Transfer to the pan: Scrape the batter into the prepared pan and spread evenly with a spatula.
  9. Bake: Place the pan in the preheated oven and bake for 22-26 minutes. At 22 minutes, check for doneness: edges should be golden brown and pulling away from the sides; center should look set but still soft. A toothpick inserted in the center should come out with a few moist crumbs, not wet batter.
  10. Cool completely: Place the pan on a cooling rack and let cool for at least 30 minutes in the pan. Then use the parchment overhang to lift them out and transfer to the rack to cool completely.
  11. Make the drizzle: Once completely cool, place remaining ¼ cup white chocolate chips in a small microwave-safe bowl with 1 teaspoon coconut oil. Microwave in 20-second intervals, stirring between each, until smooth (about 40-60 seconds total).
  12. Drizzle and set: Transfer melted white chocolate to a small zip-top bag, snip off a tiny corner, and drizzle back and forth over the blondies. Let set for about 15 minutes before slicing (or refrigerate for 5 minutes to speed up).
  13. Slice and serve: Use a sharp knife to cut into 9 squares. Wipe the knife between each slice for clean cuts. Serve at room temperature.

Notes

Don’t skip browning the butter—it adds a nutty depth. Watch baking time closely; blondies go from perfect to dry in about 90 seconds. Let blondies cool completely before drizzling to prevent the white chocolate from being absorbed. For best results, bake the day before—they taste even better on day two. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
