Ingredients

Scale
  • 2 to 3 pounds turkey breast (bone-in or boneless)
  • 1 cup fresh cranberries (about 100 grams)
  • 1/2 cup orange juice (120 ml), freshly squeezed
  • 2 tablespoons orange zest (from about 2 oranges)
  • 1/4 cup honey (85 grams)
  • 2 tablespoons unsalted butter (28 grams)
  • 3 cloves garlic, minced
  • 2 sprigs fresh rosemary
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center.
  2. Pat the turkey breast dry with paper towels.
  3. Drizzle the olive oil over the turkey and rub it all over. Sprinkle with salt and pepper, seasoning all sides.
  4. In a small saucepan over medium heat, combine fresh cranberries, orange juice, honey, butter, and minced garlic. Stir occasionally and let it come to a simmer. Cook until cranberries start to pop and soften, about 5 minutes. Remove from heat and stir in orange zest. Let cool slightly.
  5. Place the turkey in a roasting pan (9×13-inch or similar). If bone-in, place skin-side up. Tuck rosemary sprigs around the turkey.
  6. Brush half the glaze over the turkey using a basting brush. Reserve the remaining glaze.
  7. Roast for 30 minutes.
  8. Remove the pan from the oven. Baste with pan juices, then brush on another layer of the reserved glaze.
  9. Return to the oven and roast for another 20 to 30 minutes, until internal temperature reaches 155°F (68°C) in the thickest part.
  10. Remove from oven, tent loosely with foil, and let rest for 10 to 15 minutes.
  11. Slice against the grain and serve with pan juices and burst cranberries spooned over the top.

Notes

Don’t skip drying the turkey; it ensures the glaze sticks. Use a meat thermometer for perfect doneness—pull at 155°F, as temperature rises during resting. Watch the glaze in the last 10 minutes to prevent burning; tent with foil if needed. Let cranberries burst naturally for best texture.
