Ingredients

Scale
  • 1 pound ground beef (80/20 works best)
  • 8 ounces cremini mushrooms, sliced
  • 4 ounces white mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream (full-fat recommended)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 12 ounces wide egg noodles
  • 1 tablespoon salt (for pasta water)
  • 2 tablespoons butter

Instructions

  1. Fill a large pot with water, add 1 tablespoon of salt, and bring to a rolling boil.
  2. Add egg noodles and cook according to package directions (about 6-8 minutes for al dente). Drain, return to pot, and toss with 2 tablespoons of butter. Set aside.
  3. While noodles cook, heat a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until browned (5-7 minutes). Transfer beef to a plate, leaving about 2 tablespoons of rendered fat in the pan.
  4. Reduce heat to medium. Add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  5. Add both types of sliced mushrooms. Cook for 5-6 minutes, stirring occasionally, until they release liquid and start to brown. Season with a pinch of salt and pepper.
  6. Sprinkle flour over mushrooms and onions, stirring constantly for 1 minute to cook out raw flour taste.
  7. Slowly pour in beef broth while stirring continuously. Add Worcestershire sauce and Dijon mustard. Bring to a gentle simmer and cook for 2-3 minutes until slightly thickened.
  8. Return cooked ground beef to the pan along with any accumulated juices. Stir and simmer for another 2 minutes.
  9. Remove pan from heat. Let cool for about 30 seconds, then stir in room-temperature sour cream until smooth and creamy. Adjust salt and pepper to taste.
  10. Add buttered noodles to the stroganoff sauce and toss gently until well coated. Garnish with fresh parsley if desired.

Notes

Let sour cream come to room temperature before adding to prevent curdling. Don’t rush the browning of the beef for maximum flavor. Season as you go for layered flavor. Use wide egg noodles for best texture. For lighter version, use ground turkey and Greek yogurt. For vegetarian, double mushrooms and use vegetable broth. Leftovers keep in fridge for up to 3 days; reheat gently on stovetop with a splash of broth.
