Ingredients

Scale
  • 6 cups whole milk (1.4 liters)
  • 1 cup heavy cream (240 ml)
  • 1 ½ cups semi-sweet chocolate chips (260 grams)
  • ¼ cup unsweetened cocoa powder (20 grams)
  • ½ cup granulated sugar (100 grams)
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • For the Peppermint Whipped Cream:
  • 1 cup heavy cream (240 ml), cold
  • 2 tablespoons powdered sugar (15 grams)
  • ½ teaspoon peppermint extract
  • Crushed candy canes for garnish (optional)

Instructions

  1. In a small bowl, whisk together the cocoa powder, sugar, and salt.
  2. Pour the whole milk and heavy cream into a 6-quart or larger slow cooker. Add the semi-sweet chocolate chips and vanilla extract. Sprinkle the dry ingredient mixture over the top and stir well with a whisk.
  3. Cover and cook on low for 2 hours. Do not cook on high. After 1 hour, give it a gentle stir. The cocoa is ready when steaming hot, smooth, and chocolate chips are fully melted.
  4. While the cocoa cooks, make the peppermint whipped cream: In a mixing bowl, combine cold heavy cream, powdered sugar, and peppermint extract. Beat with a hand mixer on medium-high speed until stiff peaks form, about 3-4 minutes. Do not over-whip.
  5. Ladle the hot cocoa into mugs. Top each with a generous dollop of peppermint whipped cream and sprinkle with crushed candy canes if desired. Serve immediately.

Notes

The cocoa can be kept on the ‘warm’ setting for up to 3 hours after cooking. Stir before serving. For a dairy-free version, use full-fat oat milk and canned coconut cream instead of heavy cream, and dairy-free chocolate chips. Leftover cocoa can be stored in an airtight container in the refrigerator for up to 4 days; reheat on the stovetop or microwave.
