  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 (8-ounce) block cream cheese, softened and cut into cubes
  • 1 cup shredded sharp cheddar cheese, plus more for topping
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 6 slices bacon, cooked until crispy and crumbled
  • 1/2 cup shredded cheddar cheese (for topping)
  • 1/4 cup sour cream (for topping)
  • 3 green onions, thinly sliced (for topping)

Instructions

  1. Prep your ingredients: Peel and dice potatoes into 1/2-inch cubes. Finely chop onion and mince garlic.
  2. Layer it up: Add diced potatoes, chopped onion, and minced garlic to the slow cooker. Pour in chicken broth and water. Season with salt, pepper, and smoked paprika (if using). Stir.
  3. Cook low and slow: Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until potatoes are fork-tender.
  4. Add the cream cheese: Add cubed cream cheese to the slow cooker and stir gently until mostly melted.
  5. Mash or blend: Use an immersion blender to pulse 5-6 times for a chunky texture, or blend until smooth. Alternatively, use a potato masher.
  6. Stir in the cheese: Add 1 cup shredded cheddar cheese and stir until melted. Taste and adjust seasoning.
  7. Cook the bacon: While soup finishes, cook bacon until crispy, drain on paper towels, and crumble.
  8. Serve and load it up: Ladle soup into bowls and top with crumbled bacon, extra cheddar cheese, sour cream, and sliced green onions.

Notes

For a dairy-free version, use dairy-free cream cheese and vegan cheddar. For a vegetarian version, use vegetable broth and omit bacon. Soup thickens as it cools; thin with milk or broth if needed. Best made a day ahead for enhanced flavor.
