This incredibly tender and flavorful Crockpot meatloaf is topped with a sweet and tangy brown sugar glaze. With just 15 minutes of prep, the slow cooker does all the work, making it the perfect set-it-and-forget-it weeknight dinner that the whole family will love.

Ingredients

Scale
  • 2 pounds ground beef (80/20 blend)
  • 1 cup plain breadcrumbs
  • ½ cup milk (whole or 2%)
  • 2 large eggs, lightly beaten
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • ¼ cup ketchup
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • ½ cup brown sugar, packed
  • ½ cup ketchup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder

Instructions

  1. Prepare your slow cooker. If using a foil sling, tear off two long sheets of aluminum foil and crisscross them in the bottom of your Crockpot. If using a loaf pan, spray it lightly with nonstick cooking spray.
  2. Make the glaze first. In a small bowl, whisk together the brown sugar, ½ cup ketchup, apple cider vinegar, Dijon mustard, and garlic powder. Set aside.
  3. In a large mixing bowl, whisk together the milk, beaten eggs, Worcestershire sauce, and ¼ cup of ketchup until fully incorporated.
  4. Add the breadcrumbs, diced onion, minced garlic, dried oregano, salt, and pepper to the bowl. Stir until just combined.
  5. Add the ground beef to the bowl. Use your hands to gently mix everything together until just incorporated. Do not overmix.
  6. Transfer the meat mixture to your prepared slow cooker. If using a foil sling, shape it into a rounded loaf shape, leaving about an inch of space around the edges. If using a loaf pan, press the mixture in evenly.
  7. Spoon about half of the prepared brown sugar glaze over the top of the meatloaf and spread evenly. Reserve the remaining glaze.
  8. Cover the slow cooker with the lid and cook on LOW for 4 to 5 hours, or on HIGH for 2½ to 3 hours, until the internal temperature reaches 160°F (71°C) in the center.
  9. About 30 minutes before the meatloaf is done, carefully spoon the remaining glaze over the top.
  10. Carefully lift the meatloaf out of the slow cooker using the foil sling or by inverting the loaf pan. Let it rest on a cutting board for 10 minutes before slicing.

Notes

Don’t skip the resting time—it lets the juices redistribute so your slices hold together. Use a meat thermometer to ensure the internal temperature reaches 160°F (71°C). For easier cleanup, line your Crockpot with a slow cooker liner. If you notice a lot of liquid pooling around the bottom, use a turkey baster to remove some of it about halfway through cooking.
