Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 oz brie cheese, cut into 24 small cubes (about ½-inch each, rind on)
  • ⅓ cup whole berry cranberry sauce (homemade or canned)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Flaky sea salt, for sprinkling
  • Fresh rosemary or thyme, for garnish (optional)
  • For the cranberry sauce (if making from scratch):
  • 1 cup fresh or frozen cranberries
  • ¼ cup orange juice
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon orange zest

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Lightly grease your mini muffin tin with cooking spray or butter.
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheet to about ⅛-inch thickness. Using a 2-inch round cookie cutter, cut out 24 circles. Re-roll scraps once if needed.
  3. Gently press each pastry circle into a cup of the mini muffin tin, making sure the edges come up slightly above the rim.
  4. Place one cube of brie (rind and all) into each pastry cup.
  5. Spoon about ½ teaspoon of cranberry sauce over each brie cube.
  6. Using a pastry brush, lightly coat the exposed edges of the puff pastry with the beaten egg and water mixture.
  7. Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the pastry is puffed and deeply golden.
  8. Remove the tin from the oven and let the bites cool in the pan for 2-3 minutes. Using a small spoon or offset spatula, gently lift each bite out of the tin and transfer to a serving platter. Sprinkle immediately with flaky sea salt and a few fresh rosemary or thyme leaves if using.
  9. Serve warm, within 15 minutes of coming out of the oven.

Notes

Keep puff pastry cold for best results. Flaky sea salt is key. Can be assembled up to 4 hours ahead and refrigerated unbaked. For gluten-free, use gluten-free puff pastry. For vegan, use vegan puff pastry and plant-based brie.
