These Holiday Cranberry Brie Bites with Puff Pastry are the perfect quick and easy appetizer for any gathering. With flaky pastry, warm melty brie, and tangy cranberry sauce, they come together in about 15 minutes of prep and always impress guests.

Ingredients

Scale
  • 1 package frozen puff pastry sheets, thawed
  • 8 ounces brie cheese, rind removed
  • ½ cup cranberry sauce (whole berry or jellied)
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons honey
  • 1 large egg, beaten (for egg wash)
  • ½ teaspoon flaky sea salt
  • ¼ cup pecans or walnuts, finely chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Thaw the puff pastry according to package directions until cold but pliable.
  3. Lightly flour your work surface and unfold the puff pastry sheets. Gently roll out each sheet to about ⅛-inch thick to smooth the creases.
  4. Cut the pastry into rounds or squares using a 2-inch cookie cutter or a sharp knife. You should get about 24 pieces from two sheets.
  5. Press each pastry piece gently into the cups of a mini muffin tin, forming a small cup shape. Alternatively, place them on the parchment-lined baking sheet and pinch up the edges slightly.
  6. Cut the brie into small cubes, about ½-inch pieces, removing the rind as you go.
  7. Place one cube of brie in each pastry cup.
  8. Spoon about 1 teaspoon of cranberry sauce over each brie cube.
  9. Brush the edges of the pastry with the beaten egg wash.
  10. Sprinkle a pinch of flaky sea salt over each bite, along with a tiny bit of chopped rosemary if using.
  11. Bake for 12-15 minutes until the pastry is golden brown and puffed, and the brie is melted and bubbly.
  12. Remove from the oven and let cool in the pan for 2-3 minutes. Use a small offset spatula or butter knife to gently lift them out.
  13. Drizzle with honey and sprinkle with chopped nuts and additional fresh rosemary just before serving.

Notes

Keep everything cold for best results. If your kitchen is warm, pop the assembled bites in the fridge for 10 minutes before baking. Don’t skip the egg wash for that golden-brown color. Toast nuts for extra depth of flavor. You can assemble these bites completely (minus honey and nuts) up to 24 hours ahead and refrigerate. Start checking at 10 minutes for doneness as ovens vary.
