This cozy copycat Starbucks pumpkin cream cold brew is a quick and easy fall ritual. Made with simple ingredients, it delivers a creamy, spiced, just-sweet-enough layer floating on top of dark, bold cold brew—better than takeout and costs pennies.

Ingredients

Scale
  • ¼ cup (60 ml) heavy cream
  • 2 tablespoons (30 ml) whole milk
  • 2 tablespoons (30 grams) pumpkin puree (100% pure, not pumpkin pie filling)
  • 1 tablespoon (15 ml) maple syrup
  • ½ teaspoon vanilla extract
  • ¼ teaspoon pumpkin pie spice
  • Pinch of salt
  • 1 cup (240 ml) cold brew coffee
  • Ice cubes
  • Extra pumpkin pie spice for dusting (optional)
  • Cinnamon stick for garnish (optional)

Instructions

  1. Make the pumpkin cream foam: In a small bowl or mason jar, combine ¼ cup heavy cream, 2 tablespoons whole milk, 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, ½ teaspoon vanilla extract, ¼ teaspoon pumpkin pie spice, and a tiny pinch of salt. Whisk vigorously for about 2 minutes, or until the mixture thickens and holds soft peaks. If using a mason jar, screw the lid on tight and shake for about 60 seconds. The foam should be thick enough to slowly drip off a spoon—not runny, but not stif…
  2. Prepare your glass: Fill a tall glass with ice cubes all the way to the top.
  3. Pour the cold brew: Slowly pour 1 cup of cold brew coffee over the ice, leaving about 2 inches of space at the top for the pumpkin cream.
  4. Add the pumpkin cream: Gently spoon the pumpkin cream foam over the top of the cold brew, starting from the edges and working your way to the center. The foam should sit on top like a fluffy orange cap.
  5. Finish and serve: Dust the top with a light sprinkle of pumpkin pie spice or cinnamon. Insert a straw and serve immediately. Optionally, give it a gentle stir if you want the flavors to mix.

Notes

For best results, use cold ingredients straight from the fridge. If the foam is too thin, refrigerate for 5 minutes before spooning onto the cold brew. If too thick, add a splash of milk and whisk again. The foam is best made fresh and does not store well. Homemade cold brew (steeped 18-24 hours) yields a smoother, less acidic base.
