These easy iced spritz cookies are the perfect Christmas treat. With a soft, buttery dough that pipes beautifully and a simple glossy icing, they are quick to make and always a crowd-pleaser.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Food coloring (optional)
  • Sprinkles (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Beat in the egg yolk, vanilla extract, and almond extract until combined.
  4. In a separate bowl, whisk together the flour and salt. Gradually add this to the butter mixture, mixing on low speed until just combined.
  5. Spoon the dough into the cookie press cylinder, filling about three-quarters full. Attach the desired disc.
  6. Hold the press perpendicular to the baking sheet. Press down firmly, then lift straight up. If dough sticks, chill for 10 minutes.
  7. Bake for 7-9 minutes, or until edges are just barely golden. Rotate the baking sheet halfway through.
  8. Let cookies cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust consistency as needed.
  10. Dip the tops of the cooled cookies into the icing, or drizzle with a spoon. Add sprinkles immediately if using.
  11. Let the icing set for about 30 minutes, or until firm to the touch.

Notes

Dough temperature is key: if too warm, chill for 10 minutes; if too cold, let sit at room temperature. Do not overbake; edges should be just golden. For best results, use room temperature butter and cool baking sheets between batches.
