Easy Kid-Approved Roasted Delicata Squash Rings Recipe

These roasted delicata squash rings with maple glaze are sweet, tender, and disappear faster than I can make them. The skin is edible and gets wonderfully crispy in the oven, making this a quick and easy side dish that even picky eaters love.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 2 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: fresh thyme leaves or flaky sea salt for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly and pat dry.
  3. Cut off both ends of each squash (about 1/4 inch from each end).
  4. Slice squash crosswise into 1/2-inch thick rings. Scoop out seeds and stringy bits from the center.
  5. Arrange rings in a single layer on the baking sheet, leaving space between each ring.
  6. Drizzle with olive oil and toss gently to coat each ring.
  7. Sprinkle both sides with salt and pepper.
  8. Roast for 15 minutes.
  9. While squash roasts, mix maple syrup and cinnamon in a small bowl.
  10. After 15 minutes, remove pan from oven. Flip each ring and brush the maple glaze onto the tops.
  11. Return to oven and roast for another 10-12 minutes, until tender and edges are caramelized.
  12. Check doneness: a fork should slide easily into the flesh. If needed, roast 2-3 more minutes.
  13. Let rest on the pan for 2 minutes.
  14. Serve warm, garnished with fresh thyme or flaky sea salt if desired.

Notes

Don’t overcrowd the pan—rings should not touch to avoid steaming. Cut rings evenly for uniform cooking. Add maple glaze halfway through to prevent burning. For air fryer: cook at 375°F for 8 minutes, flip and glaze, then 5-7 more minutes. Leftovers keep in fridge for up to 4 days; reheat in oven or air fryer for best texture.
