These Quick Maple Bourbon Pecan Pie Bars are a faster, simpler version of traditional pecan pie with a buttery shortbread crust, toasted pecans, rich maple syrup, and warm bourbon. Ready in 30 minutes, they’re perfect for any occasion.

Ingredients

Scale
  • 1 ½ cups all-purpose flour (190 grams)
  • ½ cup unsalted butter, cold and cubed (113 grams, 1 stick)
  • ¼ cup granulated sugar (50 grams)
  • ¼ teaspoon salt
  • ⅔ cup pure maple syrup (160 ml)
  • ¼ cup packed light brown sugar (50 grams)
  • ¼ cup bourbon (60 ml)
  • 2 large eggs, room temperature
  • 2 tablespoons unsalted butter, melted (28 grams)
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves (200 grams)
  • Flaky sea salt (optional, for garnish)
  • ⅓ cup chocolate chips (optional)
  • ½ teaspoon cinnamon or cardamom (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray with nonstick spray or rub with butter.
  2. In a medium bowl, whisk together flour, sugar, and salt. Add cold cubed butter and cut in with a pastry cutter or fork until mixture resembles coarse meal with pea-sized butter pieces.
  3. Press mixture evenly into prepared pan. Bake for 12 minutes until edges are just golden. Set aside.
  4. In a medium bowl, whisk together maple syrup, brown sugar, and bourbon until sugar dissolves. Add eggs and vanilla, whisk until smooth. Whisk in melted butter.
  5. Fold in pecan halves (and optional chocolate chips or spices) gently with a spatula.
  6. Pour filling over hot crust and spread evenly. Bake for 18-20 minutes until filling is set around edges and slightly jiggly in center.
  7. Cool completely in pan on a wire rack (about 1 hour). Use parchment to lift slab onto cutting board. Cut into 16 squares with a sharp knife, wiping blade clean between cuts.
  8. Sprinkle with flaky sea salt before serving if desired.

Notes

Toast pecans before adding for best flavor. Use room temperature eggs. Don’t overmix crust or filling. Bars taste even better the next day. For clean cuts, chill bars 15-20 minutes before cutting and run knife under hot water between cuts.
