A hearty and comforting sheet pan dinner featuring smoky sausage, tender potatoes, and caramelized peppers and onions, all roasted together for an easy weeknight meal that tastes like a celebration.

  • 1 ½ pounds smoked beef or pork sausage (like kielbasa or bratwurst), sliced into 2-inch pieces
  • 3 medium Yukon Gold potatoes, cut into 1-inch chunks (about 1 ½ pounds)
  • 2 bell peppers (one red, one yellow or orange), seeded and sliced into 1-inch strips
  • 1 large red onion, sliced into ½-inch wedges
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon caraway seeds (optional)
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon brown sugar
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)
  • Whole grain mustard or spicy brown mustard (for serving, optional)
  • Warm pretzel rolls or crusty bread (for serving, optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the center. Line your sheet pan with parchment paper or foil for easy cleanup.
  2. Parboil the potatoes: Place the potato chunks in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook for 8-10 minutes, until just fork-tender but not falling apart. Drain well and let them steam dry for a minute.
  3. While the potatoes cook, make the seasoning blend: In a small bowl, combine smoked paprika, caraway seeds (if using), dried thyme, garlic powder, onion powder, brown sugar, and a good pinch of salt and pepper. Stir to combine.
  4. Prep the vegetables: Slice the bell peppers into 1-inch strips and the onion into ½-inch wedges. Mince the garlic. Slice the sausage into 2-inch pieces on a slight diagonal.
  5. Season everything: In a large bowl, toss the parboiled potatoes, peppers, onions, and garlic with 2 tablespoons of olive oil and about two-thirds of the seasoning blend. Spread them evenly on the prepared sheet pan in a single layer.
  6. Add the sausage: Toss the sausage pieces with the remaining 1 tablespoon olive oil and the rest of the seasoning blend. Nestle them among the vegetables on the sheet pan, keeping them mostly on top.
  7. Roast for 20 minutes.
  8. Flip and rotate: After 20 minutes, remove the pan and use tongs to flip the sausage and stir the vegetables. Return to the oven and roast for another 15-20 minutes, until the potatoes are golden and crispy, the peppers are caramelized at the edges, and the sausage is nicely browned.
  9. Rest before serving: Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley if desired.

Notes

Don’t skip parboiling the potatoes for the best texture. Cut everything roughly the same size for even cooking. Avoid overcrowding the pan to ensure proper roasting. Flip halfway through for even browning. Let rest for 5 minutes before serving. For extra crispy potatoes, broil for the last 2-3 minutes.
