Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 large carrots, peeled and diced (about 1 cup)
  • 2 celery stalks, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts (about 2 medium breasts)
  • 1 (6-ounce) box long grain and wild rice mix (seasoning packet discarded)
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 cup heavy cream
  • 2 ounces cream cheese, softened
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish, optional)

Instructions

  1. Melt the butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes until the onions are translucent and the vegetables have softened.
  2. Add the minced garlic, dried thyme, and dried rosemary. Stir constantly for about 30 seconds until fragrant.
  3. Place the chicken breasts on top of the vegetables. Pour in the chicken broth and water. Add the wild rice mix (discard the seasoning packet). Stir to combine.
  4. Bring to a gentle boil over high heat, then reduce heat to low, cover, and simmer for 20-25 minutes until the rice is tender and the chicken is cooked through.
  5. Remove the chicken from the pot and let it rest for 1-2 minutes. Shred the chicken into bite-sized pieces using two forks.
  6. Return the shredded chicken to the pot. Reduce heat to low. Add the heavy cream and softened cream cheese. Stir gently until the cream cheese is completely melted and the broth is creamy, about 2-3 minutes.
  7. Taste and season with salt and black pepper as needed. Stir in the fresh parsley if using. Let simmer for another 2-3 minutes to meld flavors.
  8. Serve immediately, ladled into bowls. Garnish with additional parsley if desired.

Notes

For best results, do not rush the sauté step—it builds flavor. Always add dairy over low heat to prevent curdling. Season creamy soups at the end to avoid over-salting. The soup thickens as it sits; add a splash of broth or water when reheating. To freeze, prepare without dairy and add cream and cream cheese after thawing and reheating.
