A quick and easy snack board featuring pumpkin spice-coated nuts, cheese, fruit, and crackers, perfect for Friendsgiving or a weeknight dinner. Ready in just 15 minutes with no cooking required.

Ingredients

Scale
  • 1 cup raw almonds (or pecans, cashews, or a mix)
  • 1 cup raw pumpkin seeds (pepitas work great)
  • 2 tablespoons maple syrup (the real stuff, not pancake syrup)
  • 1 tablespoon coconut oil or butter, melted
  • 1 ½ teaspoons pumpkin pie spice (store-bought is fine, but I love McCormick’s blend)
  • ½ teaspoon cinnamon (adds warmth)
  • ¼ teaspoon salt (a flaky sea salt like Maldon works beautifully here)
  • 8 ounces sharp cheddar cheese, sliced (I prefer Cabot or Tillamook for flavor)
  • 4 ounces brie or camembert (leave it out for 20 minutes to soften)
  • 1 cup dried cranberries (unsweetened if you’re watching sugar)
  • 1 cup apple slices (Honeycrisp or Fuji hold up best—toss with lemon juice to prevent browning)
  • 1 cup pear slices (Bartlett or Bosc work well)
  • ½ cup pumpkin butter (Stonewall Kitchen makes a good one, or use apple butter)
  • 1 cup whole grain crackers (I like Mary’s Gone Crackers or simple water crackers)
  • 1 cup pretzel sticks (adds that salty crunch)
  • Fresh rosemary sprigs for garnish (optional but pretty)

Instructions

  1. Toast the nuts and seeds (5 minutes): Place your small skillet over medium heat. Add the raw almonds and pumpkin seeds. Toast them for about 3-4 minutes, shaking the pan occasionally, until they start to smell nutty and look slightly golden. Be careful here—they can burn fast.
  2. Make the pumpkin spice coating (2 minutes): In a small bowl, whisk together the maple syrup, melted coconut oil, pumpkin pie spice, cinnamon, and salt. Once your nuts are toasted, pour this mixture over them in the pan. Stir constantly for about 1 minute until the coating thickens and clings to the nuts.
  3. Spread the nuts to cool (2 minutes): Pour the coated nuts onto a piece of parchment paper or a plate. Spread them out in a single layer so they don’t clump together. Let them cool while you assemble the rest of the board—they’ll get crunchier as they cool. If you’re in a hurry, pop them in the fridge for 5 minutes.
  4. Prep the fruit and cheese (3 minutes): While the nuts cool, slice your apples and pears. I like to cut them into thin wedges—about 8 slices per apple. Toss the apple slices with a little lemon juice to keep them from turning brown. Slice your cheddar into thin triangles or rectangles, and if you’re using brie, cut it into wedges or leave it whole and let people dig in.
  5. Arrange the board (3 minutes): Start with the larger items—place your cheese wedges and brie in opposite corners of the board. Add the small bowls of pumpkin butter and dried cranberries. Then fill in the gaps with the apple slices, pear slices, crackers, and pretzel sticks. Finally, sprinkle the cooled pumpkin spice nuts and seeds in any empty spaces. Tuck fresh rosemary sprigs around the edges for a pop of green.
  6. Serve immediately: That’s it! Your board is ready. Place it in the center of the table and watch everyone gather around. No plates needed—just napkins and happy faces.

Notes

The pumpkin spice nuts can be made up to 3 days in advance and stored in an airtight container. For best results, prep all components separately and assemble the board just before serving. The fruit should be cut fresh and tossed with lemon juice to prevent browning. Let the brie come to room temperature for at least 20 minutes before serving for best flavor and texture.
