This creamy, cheesy, and slightly smoky dip comes together in under 30 minutes and is perfect for New Year’s good luck. Made with canned black-eyed peas, cream cheese, and cheddar, it’s a budget-friendly, picky-eater-approved tradition.

Ingredients

Scale
  • 2 (15-ounce) cans black-eyed peas, drained and rinsed
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup sour cream
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1 (10-ounce) can RoTel diced tomatoes and green chilies, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon hot sauce (optional)
  • 2–3 green onions, sliced (for garnish)

Instructions

  1. Preheat oven to 375°F.
  2. Drain and rinse black-eyed peas; drain RoTel well.
  3. If cream cheese is not softened, microwave for 15-20 seconds until soft but not melted.
  4. In a mixing bowl, beat softened cream cheese, sour cream, garlic powder, onion powder, smoked paprika, salt, pepper, and hot sauce (if using) with a hand mixer until smooth and fluffy, about 1 minute.
  5. Stir in 1 cup shredded cheddar, drained black-eyed peas, and drained RoTel until evenly combined.
  6. Transfer mixture to a greased 8×8-inch baking dish and spread into an even layer.
  7. Sprinkle remaining 1/2 cup shredded cheddar on top.
  8. Bake for 20-25 minutes until hot and bubbly, with cheese melted and golden in spots.
  9. Let rest for 5 minutes before serving.
  10. Garnish with sliced green onions and serve warm with tortilla chips, crackers, or toasted baguette slices.

Notes

For best results, use room temperature cream cheese and drain RoTel thoroughly to avoid a watery dip. The dip can be assembled ahead and refrigerated; add 5-10 minutes to baking time if starting cold. For a spicier version, use hot RoTel or add diced jalapeño. Leftovers keep in the fridge for up to 4 days.
