Ingredients

Scale
  • 8 ounces goat cheese, softened
  • 4 ounces cream cheese, softened
  • 2 tablespoons honey
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1/4 teaspoon black pepper, freshly ground
  • Pinch of sea salt
  • 8 ounces salami or prosciutto (or a mix)
  • 4 ounces sharp cheddar cheese, sliced
  • 4 ounces brie or camembert
  • 1 cup mixed olives (kalamata and castelvetrano)
  • 1/2 cup roasted almonds or pecans
  • 1 cup fresh grapes or sliced figs
  • 1 cup dried apricots or dates
  • 1 small baguette, sliced and toasted (or crackers)
  • Fresh rosemary sprigs and edible flowers for garnish (optional)

Instructions

  1. Make the goat cheese dip: In a small mixing bowl, combine softened goat cheese, cream cheese, honey, chopped rosemary, thyme, black pepper, and a pinch of sea salt. Mix with a rubber spatula until smooth and creamy. Adjust honey or salt to taste. Set aside.
  2. Prep your board: Place a large wooden board or platter on a flat surface. Arrange small ramekins or bowls for olives, nuts, and extra honey to visualize the layout.
  3. Create the spiderweb dip: Using an offset spatula or butter knife, spread the goat cheese mixture into a round, flat circle about 6-8 inches in diameter in the center of the board. Drag lines from the center outward like spokes, then drag curved lines from one spoke to the next in a spiral pattern, wiping the knife clean between each curve.
  4. Arrange the meats: Fold or roll salami slices into small clusters or roses. Lay prosciutto in loose, wavy ribbons around the board, placing them at different points around the dip.
  5. Add the cheeses: Place sliced cheddar and brie in separate areas of the board. Fan out cheddar slices or stack them; leave brie in a wedge for self-serving.
  6. Fill in with fruits and extras: Scatter grapes or fig slices around the board, filling gaps. Add dried apricots or dates in small clusters. Sprinkle roasted almonds or pecans in empty spaces.
  7. Add finishing touches: Place toasted baguette slices or crackers around the edge of the board. Tuck fresh rosemary sprigs under the dip and scatter edible flowers if using.

Notes

Let goat cheese and cream cheese soften at room temperature for 30 minutes before mixing for a smooth dip. Add crackers just before serving to prevent sogginess. The dip can be made up to 2 days ahead and stored in the fridge; bring to room temperature before spreading. For a dairy-free version, use plant-based cream cheese and soft cashew cheese. For a gluten-free board, use gluten-free crackers or rice cakes.
