A creamy, slightly sweet corn casserole with a kick of jalapeño and sharp cheddar cheese. Perfect for family dinners or potlucks, this easy side dish comes together in under 45 minutes and is always a crowd-pleaser.

Ingredients

Scale
  • 15 oz can whole kernel corn, drained
  • 15 oz can creamed corn
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup milk
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1–2 fresh jalapeños, seeded and finely diced
  • Optional topping: extra shredded cheddar and sliced jalapeño rounds

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Drain the whole kernel corn and set aside.
  3. In a large mixing bowl, whisk together the melted butter and sugar until combined.
  4. Add the beaten eggs and milk, whisking until smooth and pale yellow.
  5. Stir in the flour, cornmeal, salt, and pepper until just combined. Do not overmix.
  6. Fold in both cans of corn (drained whole kernel and creamed corn) until evenly distributed.
  7. Add the shredded cheddar cheese and diced jalapeño. Reserve about 1/4 cup of cheese for topping if desired. Fold gently.
  8. Pour the mixture into the prepared baking dish and spread evenly. Sprinkle reserved cheese and jalapeño slices on top if using.
  9. Bake for 35-40 minutes, or until edges are golden brown and center is set. A knife inserted in the middle should come out clean.
  10. Let rest for 5-10 minutes before serving.

Notes

For a milder version, remove all seeds and membranes from the jalapeño. For extra heat, leave some seeds in or add a second jalapeño. Shred your own cheddar for best melting. Let ingredients come to room temperature before mixing for a smoother batter. Leftovers keep well in the refrigerator for up to 4 days and can be frozen for up to 3 months.
