Ingredients

Scale
  • 6 medium apples (about 2½ pounds or 1.1 kg), a mix of sweet and tart varieties like Honeycrisp and Granny Smith, peeled, cored, and sliced into ¼-inch thick pieces
  • ⅓ cup (65 g) granulated sugar
  • ¼ cup (50 g) packed light brown sugar
  • 2 tablespoons (16 g) all-purpose flour
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (90 g) old-fashioned rolled oats
  • ¾ cup (95 g) all-purpose flour
  • ½ cup (100 g) packed light brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113 g or 1 stick) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Place a rack in the center position.
  2. Prepare the apples: Peel, core, and slice your apples into ¼-inch thick pieces. Place them in a large mixing bowl.
  3. Make the filling: To the bowl with the apples, add the granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss everything together until the apples are evenly coated. Set aside.
  4. Make the oat streusel: In a medium mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Whisk or stir until evenly distributed. Pour the melted butter over the dry ingredients and stir until the mixture looks like wet, clumpy sand. It should hold together when squeezed but still be crumbly.
  5. Assemble the crisp: Pour the apple filling into an ungreased 9×13-inch baking dish and spread it into an even layer. Sprinkle the oat streusel evenly over the top, using your fingers to drop it in clumps.
  6. Bake: Place the dish on the center rack and bake for 40 to 45 minutes. After 30 minutes, check the streusel; if it’s browning too quickly, loosely tent with aluminum foil. The crisp is done when the filling is bubbling around the edges and the apples are tender.
  7. Cool slightly before serving: Let the crisp sit on a wire rack for at least 15 to 20 minutes before serving to allow the juices to thicken.

Notes

For best results, use a mix of apple varieties like Honeycrisp and Granny Smith. Let the crisp rest for 15-20 minutes after baking to allow the juices to thicken. If the streusel browns too quickly, tent with foil. For a gluten-free version, use a 1-to-1 gluten-free baking flour blend and certified gluten-free oats. For a vegan version, use melted coconut oil or vegan butter.
