These Holiday Cranberry Baked Brie Bites are the perfect quick and easy appetizer for any festive gathering. With flaky puff pastry, creamy brie, and tart cranberry sauce, they come together in just 30 minutes and are guaranteed to be a crowd-pleaser.

Ingredients

Scale
  • 1 sheet puff pastry, thawed
  • 8 ounces brie cheese
  • ½ cup cranberry sauce
  • 1 tablespoon fresh rosemary, chopped (optional)
  • 1 large egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • Flaky sea salt, a pinch
  • Honey, for drizzle (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin with non-stick spray or butter.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Using a sharp knife or pizza cutter, cut the sheet into 24 equal squares, each about 2 inches.
  3. Gently press each pastry square into a cup of the mini muffin tin, allowing the corners to stick up naturally.
  4. Cut the brie into 24 small cubes, about ½ inch each, leaving the rind on.
  5. Place one cube of brie into each pastry cup. Top each cube with about ½ teaspoon of cranberry sauce.
  6. In a small bowl, whisk together the egg and 1 tablespoon of water. Lightly brush the edges of the pastry with the egg wash, avoiding the filling.
  7. Sprinkle a tiny pinch of flaky sea salt over each bite. If using rosemary, sprinkle a little on top of the cranberry sauce.
  8. Bake for 15-18 minutes, rotating the pan halfway through, until the pastry is puffed and deeply golden brown and the brie is melted and bubbling.
  9. Let the bites cool in the pan for 5 minutes. Then, using a small spoon or offset spatula, gently lift them out and transfer to a serving platter. Drizzle with honey if desired.

Notes

Don’t overfill the cups to prevent brie from bubbling over. Keep the pastry cold for best flakiness. Use a sharp knife or pizza cutter for clean cuts. Rotate the pan halfway through baking for even browning. Let the bites cool in the pan for 5 minutes before removing to allow the cheese to set.
