Ingredients

Scale
  • 8 oz Brie (double or triple cream)
  • 6 oz Aged Cheddar (sharp white)
  • 4 oz Blue Cheese (Gorgonzola dolce)
  • 6 oz Manchego (aged at least 6 months)
  • 4 oz Prosciutto (thinly sliced)
  • 4 oz Salami (Genoa or soppressata)
  • 3 oz Capicola (or speck/coppa)
  • 6–8 Fresh Figs (Black Mission or Brown Turkey)
  • 2 Bartlett Pears (ripe but firm)
  • 2 Honeycrisp Apples
  • 1 cup Red Seedless Grapes
  • ½ cup Pomegranate Seeds
  • ½ cup Fig Jam
  • Honey (for drizzling)
  • ¾ cup Mixed Nuts (toasted almonds and candied pecans)
  • ½ cup Olives (Castelvetrano or kalamata)
  • Crackers and Bread (water crackers, crostini, seeded flatbreads)
  • Fresh Rosemary Sprigs (for garnish)
  • Edible Flowers (optional, for garnish)

Instructions

  1. Take all cheeses out of the fridge 30 minutes before serving. Slice aged cheddar and manchego into thin triangles or cubes. Leave brie whole. Crumble blue cheese.
  2. Wash and dry all fruit. Quarter figs lengthwise. Slice pears and apples into thin wedges (about 8 slices per fruit). Toss apple slices in lemon juice to prevent browning. Cut grapes into small clusters. Prepare pomegranate seeds.
  3. Place small bowls (fig jam, honey, olives) on the board, spacing them evenly. Arrange cheeses around the bowls: brie wheel in a prominent spot, fanned cheddar slices, manchego pile, and scattered blue cheese crumbles.
  4. Fold prosciutto into loose ribbons or rosettes and arrange in small clusters. Fan out salami rounds in overlapping rows. Place capicola slices in a separate pile. Leave space for fruit.
  5. Scatter fig quarters in small groups. Place pear and apple slices in fan patterns near cheeses. Tuck grape clusters in empty spaces. Sprinkle pomegranate seeds across the board.
  6. Pour nuts into empty spaces. Tuck rosemary sprigs here and there. Add edible flowers if desired. Drizzle honey over brie and some fruit.
  7. Arrange crackers and crostini in small stacks or fans around the edges, near the cheeses they pair best with.
  8. Step back and fill any obvious empty spots with extra nuts, fruit, or crackers. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours. Remove 20 minutes before serving.

Notes

Prep everything except apple and pear slices the night before. Wrap cheeses in wax paper, store meats in containers, and keep nuts in a bag. Assembly takes 10 minutes. For best flavor, let board sit at room temperature for an hour before serving.
