A warm, cozy, and budget-friendly copycat of the Starbucks Apple Crisp Oat Macchiato, made with a homemade spiced apple syrup. This kid-approved drink is easy to make and perfect for fall mornings or an after-school treat.

  • 3 medium apples (Honeycrisp or Fuji recommended), peeled, cored, and chopped
  • ½ cup packed light or dark brown sugar
  • 1 cup water
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 cup strong brewed coffee (dark roast recommended)
  • ½ cup unsweetened oat milk (barista blend preferred)
  • Optional toppings: pinch of cinnamon, caramel sauce, crushed graham crackers

Instructions

  1. Make the apple syrup: Peel, core, and chop 3 apples into small pieces.
  2. In a medium saucepan, combine chopped apples, ½ cup brown sugar, 1 cup water, 1 teaspoon cinnamon, and ¼ teaspoon nutmeg. Stir to combine.
  3. Bring to a gentle simmer over medium heat, then reduce heat to low. Cook for 15-20 minutes, stirring occasionally, until apples are very soft and liquid has reduced slightly.
  4. Place a fine-mesh strainer over a bowl or measuring cup. Pour the apple mixture into the strainer and press down on the apples with a spoon to extract as much liquid as possible. Discard apple solids.
  5. Stir in 1 teaspoon vanilla extract and 1 tablespoon lemon juice into the strained liquid. Let cool completely. Store in an airtight container in the fridge for up to two weeks.
  6. Assemble the macchiato: Brew 1 cup of strong coffee.
  7. Warm ½ cup oat milk in a small saucepan over low heat or in the microwave for 30 seconds (do not boil). Froth with a milk frother or whisk vigorously for 1 minute.
  8. Add 2-3 tablespoons of apple syrup to the bottom of a mug. Slowly pour hot coffee over the syrup and stir gently.
  9. Hold back the foam with a spoon and pour the warm oat milk over the coffee. Spoon the foam on top.
  10. Garnish with a pinch of cinnamon, and optionally drizzle with caramel sauce or sprinkle with crushed graham crackers. Serve immediately.

Notes

For a real ‘crisp’ flavor, toast a handful of rolled oats in a dry skillet for 2-3 minutes and add a teaspoon to the bottom of the mug before adding syrup. Use room temperature oat milk for better frothing. The syrup can be made in a double batch and stored for up to two weeks. For an iced version, cool the coffee and syrup, then serve over ice with cold oat milk.
