Kid-Approved Jack-o-Lantern Pumpkin Pancakes: Easy Fall Breakfast

These fluffy, perfectly spiced pumpkin pancakes are a fun and easy fall breakfast that kids love. Decorated with chocolate chips and banana slices to look like jack-o-lanterns, they’re a sneaky way to enjoy a seasonal vegetable.

  • 1 ½ cups (190g) all-purpose flour
  • 3 tablespoons (40g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup (240ml) buttermilk
  • ½ cup (120g) pumpkin purée
  • 1 large egg
  • 3 tablespoons (45g) unsalted butter, melted, plus more for the pan
  • 1 teaspoon vanilla extract
  • Chocolate chips, banana slices, or blueberries for jack-o-lantern faces

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  2. In a medium bowl, whisk together the buttermilk, pumpkin purée, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined (a few lumps are fine). Let the batter rest for 5 minutes.
  4. Heat a griddle or non-stick skillet over medium heat and add a pat of butter to coat the surface.
  5. Pour about ¼ cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  6. While pancakes are still warm, press chocolate chips and banana slices into the top pancake to create jack-o-lantern faces.

Notes

Don’t overmix the batter; lumps are okay. Let the batter rest for 5 minutes for fluffier pancakes. Adjust heat if pancakes brown too quickly. For dairy-free, use a dairy-free milk with lemon juice and oil instead of butter. For gluten-free, use a 1:1 gluten-free baking blend.
