A lighter, creamy crockpot beef and potato casserole that’s hearty, satisfying, and made with simple, wholesome ingredients. Perfect for busy weeknights and meal prep.

Ingredients

Scale
  • 1.5 lbs lean stewing beef, cut into 1-inch cubes
  • 4 medium Yukon Gold potatoes, peeled and thinly sliced (about 1/8-inch thick)
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) reduced-fat cream of chicken soup
  • 1 cup plain Greek yogurt (2% or full-fat)
  • 1/2 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup reduced-fat shredded cheddar cheese (optional)
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prep your ingredients: Peel and thinly slice potatoes, slice onion, mince garlic, and cut stewing beef into 1-inch cubes. Pat beef dry with paper towels.
  2. Brown the beef: Heat a large skillet over medium-high heat with a teaspoon of olive oil. Working in batches, sear beef cubes for about 2 minutes per side until nicely browned.
  3. Make the lighter creamy sauce: In a large mixing bowl, whisk together cream of chicken soup, Greek yogurt, beef broth, Worcestershire sauce, dried thyme, salt, and pepper until smooth.
  4. Layer the casserole: Spread a thin layer of sauce on the bottom of a 6-quart slow cooker. Add a layer of potatoes, then onions and garlic, then beef. Repeat layers, ending with a layer of sauce on top.
  5. Slow cook: Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until beef is fork-tender and potatoes are soft.
  6. Add cheese: About 10 minutes before serving, sprinkle shredded cheddar cheese over the top. Cover and let melt.
  7. Rest and serve: Turn off the slow cooker and let rest for 5 minutes. Garnish with fresh parsley and serve.

Notes

Don’t skip browning the beef for best flavor. Slice potatoes evenly for even cooking. Layer ingredients rather than dumping. Use 2% or full-fat Greek yogurt to prevent curdling. If sauce is too thin, leave lid off for last 15-20 minutes. If too thick, stir in a splash of warm beef broth.
