A lighter, dairy-free hot chocolate made in the slow cooker, perfect for holiday entertaining. Guests can customize their mugs with a variety of toppings for a cozy, crowd-pleasing treat.

Ingredients

Scale
  • 1/2 cup (40g) unsweetened cocoa powder
  • 1/2 cup (100g) granulated sweetener of choice (e.g., coconut sugar, monk fruit blend)
  • 6 cups (1.4 liters) oat milk (barista edition recommended)
  • 2 cups (475 ml) unsweetened almond milk
  • 2 teaspoons (10 ml) vanilla extract
  • 1/8 teaspoon sea salt
  • 1 whole cinnamon stick (optional)
  • Mini marshmallows (for topping)
  • Sugar-free whipped topping (for topping)
  • Dark chocolate shavings (for topping)
  • Cinnamon sticks (for stirring)
  • Peppermint crunch (crushed sugar-free peppermint candies, for topping)
  • Toasted coconut flakes (unsweetened, for topping)

Instructions

  1. In a medium bowl, whisk together cocoa powder, sweetener, and sea salt until no lumps remain.
  2. Add about 1/2 cup of the oat milk to the dry mixture and whisk into a smooth paste (blooming technique).
  3. Transfer the paste to a 6-quart slow cooker. Add remaining oat milk, almond milk, and cinnamon stick (if using). Whisk until fully combined.
  4. Cook on low for 2 hours, stirring occasionally if desired.
  5. After 2 hours, stir in vanilla extract. Taste and adjust sweetness if needed.
  6. Switch slow cooker to ‘warm’ setting to keep hot chocolate at serving temperature for up to 4 hours.
  7. While chocolate warms, arrange toppings in small bowls near the crockpot with mugs and a ladle.
  8. Ladle hot chocolate into mugs, leaving room for toppings. Let cool slightly before adding marshmallows or whipped topping.

Notes

Do not let the hot chocolate boil to avoid graininess. Blooming the cocoa powder prevents lumps. Stir before serving each round as cocoa solids can settle. For a nut-free version, use all oat milk or soy milk instead of almond milk. Leftovers keep in the refrigerator for up to 5 days and freeze for up to 3 months.
