A lighter twist on classic deviled eggs, featuring a creamy Greek yogurt filling and crispy bacon. Perfect for Thanksgiving appetizers or game-day snacking.

Ingredients

Scale
  • 12 large eggs
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices thick-cut bacon
  • 2 tablespoons fresh chives, finely chopped

Instructions

  1. Hard-boil the eggs: Place 12 eggs in a large pot, cover with cold water by 1 inch. Bring to a rolling boil over high heat. Cover, turn off heat, and let sit for exactly 10 minutes.
  2. Ice bath: While eggs sit, fill a large bowl with ice and cold water. Transfer eggs to ice bath using a slotted spoon. Cool for at least 5 minutes.
  3. Peel eggs: Gently tap each egg on counter to crack shell, roll between palms to loosen. Peel starting from wider end. If shell sticks, run under cold water.
  4. Cook bacon: Preheat oven to 400°F. Line a baking sheet with foil, lay bacon in single layer. Bake 12-15 minutes until crispy. Transfer to paper towels to drain, then crumble.
  5. Slice and scoop: Cut each peeled egg in half lengthwise. Gently pop out yolks into a medium bowl. Arrange white halves on serving platter.
  6. Make filling: Add Greek yogurt, mayonnaise, mustard, vinegar, smoked paprika, salt, and pepper to yolks. Mash with fork until smooth. Taste and adjust seasoning.
  7. Fill eggs: Spoon filling into piping bag or zip-top bag with corner snipped. Pipe filling into each egg white half, leaving a small dome.
  8. Garnish and serve: Sprinkle crumbled bacon and chopped chives over top. Dust with extra smoked paprika. Serve immediately or refrigerate until ready.

Notes

Use older eggs for easier peeling. Bake bacon for even crispiness without splatter. Make filling up to 2 days ahead. For stable eggs, slice a tiny sliver off bottom of each white half.
