  • 2 large eggs, room temperature
  • 1 cup (240ml) apple cider
  • ½ cup (120ml) vegetable oil
  • 1 teaspoon vanilla extract
  • ¼ cup (60g) unsalted butter
  • ½ cup (100g) packed light brown sugar (for glaze)
  • ¼ cup (60ml) heavy cream
  • 1 teaspoon vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Break up any brown sugar lumps.
  3. In a separate medium bowl, whisk eggs until light and frothy. Add apple cider, vegetable oil, and vanilla extract; whisk until well combined.
  4. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are okay). Do not overmix.
  5. Pour batter into prepared pan and spread evenly. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  6. Cool cake in pan for 10 minutes, then run a knife around the edge and turn out onto a cooling rack. Remove parchment and cool completely.
  7. For the glaze: In a small saucepan, melt butter over medium heat. Add brown sugar and heavy cream; whisk constantly. Bring to a gentle simmer and cook for 2-3 minutes until slightly thickened. Remove from heat and stir in vanilla and a pinch of salt. Let cool for 5 minutes.
  8. Pour glaze over cooled cake, letting it drip down the sides. Let set for 10 minutes before slicing and serving.

Notes

Use fresh, refrigerated apple cider for best flavor. Do not overmix the batter. Let the cake cool completely before glazing. The cake tastes even better the next day.
