These champagne chocolate covered strawberries are a quick and easy dessert that looks like it came from a high-end chocolatier. With just three main ingredients and about 30 minutes of work, you can create a showstopper perfect for celebrations.

  • 12 ounces (340g) semi-sweet chocolate (60-70% cacao)
  • ¼ cup (60ml) champagne or dry sparkling wine (brut)
  • 1 tablespoon (15ml) coconut oil (optional)
  • 4 ounces (113g) white chocolate for drizzling (optional)
  • Gold leaf or sprinkles (optional)

Instructions

  1. Prep the Strawberries (5 minutes): Wash strawberries gently under cool water. Do not soak. Lay them out on a clean kitchen towel or paper towels and pat completely dry. Let them sit at room temperature for about 10 minutes to ensure they are fully dry. Keep the stems on.
  2. Melt the Chocolate (10 minutes): Chop chocolate into small, even pieces. Place in a heatproof bowl or double boiler. If using a double boiler, ensure the bottom of the bowl is not touching the water. Add coconut oil if using. Stir occasionally with a dry spatula until about 75% of the chocolate is melted. Remove from heat and stir until completely smooth.
  3. Add the Champagne (2 minutes): Let the melted chocolate cool for about 2 minutes until warm but not hot. Slowly pour in the champagne while stirring gently until completely combined. If the chocolate seizes, add another tablespoon of champagne and stir vigorously.
  4. Test the Temperature (1 minute): Dip a fingertip into the chocolate. It should feel warm, not hot. Ideal temperature is 88-90°F (31-32°C).
  5. Dip the Strawberries (15 minutes): Hold a strawberry by the stem and dip it into the chocolate, submerging about three-quarters of the way. Lift out and let excess drip back into the bowl. Gently scrape the bottom against the rim. Place on a parchment-lined baking sheet. Repeat with all strawberries.
  6. Add the White Chocolate Drizzle (optional, 5 minutes): While dark chocolate is still wet, melt white chocolate using the same double boiler method. Transfer to a small zip-top bag, snip off a tiny corner, and drizzle over the dipped strawberries in a back-and-forth motion.
  7. Set the Strawberries (20-30 minutes): Place the baking sheet in the refrigerator for 20-30 minutes, or until the chocolate is completely set and firm to the touch. Do not leave longer than an hour.
  8. Final Touch (2 minutes): Once set, transfer to a serving platter. If using gold leaf, apply it now by gently pressing small pieces onto the chocolate with a dry brush or fingertip. Serve immediately or store as directed.

Notes

Don’t overheat the chocolate. Use room temperature strawberries. Work in small batches. Use a thermometer for best results. Don’t skip drying the strawberries. These are best made the same day you plan to serve them.
