Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (240g) all-purpose flour
  • ⅔ cup (60g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 30–36 Andes Crème de Menthe baking chips or Andes mints (cut into quarters if using whole mints)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 2 to 3 minutes. Scrape down the sides of the bowl halfway through.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until just incorporated. The dough will be thick and slightly sticky.
  6. Using a cookie scoop or tablespoon, portion out rounded balls of dough, about 1.5 tablespoons each. Place them about 2 inches apart on the prepared baking sheets.
  7. Bake for 8 to 10 minutes, until the edges are set but the centers are still soft and slightly underdone.
  8. Let the cookies rest on the baking sheet for exactly 60 seconds after coming out of the oven.
  9. Gently press one Andes mint piece (or one square if using cut mints) into the center of each warm cookie. Do not push too hard.
  10. Transfer the cookies to a wire rack and let them cool completely. The mint will harden as it cools.

Notes

Wait exactly 60 seconds after baking before pressing the mint onto the cookie to avoid a messy smear. For a more intense mint flavor, add ½ teaspoon peppermint extract to the dough. Cookies can be stored in an airtight container at room temperature for up to 5 days or frozen for up to 3 months.
