Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until no lumps remain.
  3. In a large bowl, combine the melted butter, vegetable oil, and granulated sugar. Beat with an electric mixer on medium speed until well combined, about 1 minute, until smooth and glossy.
  4. Add the eggs one at a time, beating well after each addition. Then add the vanilla extract and beat until combined. The mixture should be pale and creamy.
  5. Add the red gel food coloring and white vinegar. Beat on low speed until the color is evenly distributed and vibrant red.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Do not overmix; stop as soon as no streaks of flour remain.
  7. Use a rubber spatula to scrape down the sides and bottom of the bowl. Give the dough a few gentle folds to ensure everything is incorporated. The dough will be soft and slightly sticky.
  8. Place the granulated sugar in one small bowl and the powdered sugar in another for rolling.
  9. Using a cookie scoop or spoon, portion out about 1.5 tablespoons of dough. Roll into a ball between your palms. Roll the ball first in the granulated sugar, coating completely, then in the powdered sugar, coating generously. Place on prepared baking sheets, spacing about 2 inches apart.
  10. Bake for 10-12 minutes. The edges should be set and tops cracked and slightly puffed; centers will still look soft. For softer cookies, bake 10 minutes; for crisper edges, bake 12 minutes.
  11. Let cookies cool on the baking sheet for 5 minutes (crucial for structure), then transfer to a wire rack to cool completely. The powdered sugar will continue to set and create a beautiful crackled look.

Notes

For the most dramatic crackle effect, double coat the powdered sugar: roll once, let sit for a minute, then roll again. If cookies spread too much, butter may have been too warm or baking powder old. Let baking sheets cool completely between batches. Cookies taste even better the next day as flavors meld.
