These kid-approved severed finger cheese straws are cheesy, buttery, and just a little bit spicy—with a crunch that’s downright addictive. The almond ‘fingernails’ add a creepy touch without being weird to eat, making them the star of any spooky family dinner.

Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1 cup (226g) cold unsalted butter, cut into small cubes
  • 2 cups (200g) sharp cheddar cheese, finely grated
  • 1 large egg, beaten
  • 2–3 tablespoons (30-45ml) cold water
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 24–30 whole blanched almonds
  • Ketchup or red food coloring (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line your baking sheet with parchment paper. Keep butter cubes in the fridge until needed.
  2. In a large mixing bowl, whisk together the flour, smoked paprika, garlic powder, and salt until evenly distributed.
  3. Add the cold butter cubes to the flour mixture. Using a pastry cutter or two forks, cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized butter pieces (about 2-3 minutes). If butter softens, refrigerate the bowl for 5 minutes.
  4. Add the grated cheddar cheese and toss gently to combine using your hands until the mixture looks like crumbly, cheesy sand.
  5. Add the beaten egg and 2 tablespoons of cold water. Mix with a fork until the dough starts to come together. If dry, add the remaining tablespoon of water. The dough should hold together when squeezed but not be sticky.
  6. Turn the dough out onto a lightly floured surface and gently bring it together into a disc. Do not knead. Wrap in plastic wrap and refrigerate for 15 minutes.
  7. After the rest, roll the dough into a rectangle about 1/4-inch (6mm) thick. If edges crack, press them back together with fingers.
  8. Using a sharp knife or pizza cutter, cut the dough into strips about 4 inches (10cm) long and 1/2 inch (1.25cm) wide. You should get about 24-30 strips. Vary widths slightly for realism.
  9. Gently roll each strip between your palms to round the edges slightly, making one end slightly wider (knuckle end) and tapering the other (fingernail end).
  10. Place the shaped ‘fingers’ on the prepared baking sheet, spacing them about 1 inch (2.5cm) apart. Use a small knife or chopstick to create 2-3 ‘knuckle’ indentations on each finger, pressing gently.
  11. Press a blanched almond onto the tapered end of each finger to create the ‘fingernail.’ If using, dab a tiny bit of ketchup or red food coloring at the base of the almond for a ‘bloody’ cuticle effect.
  12. Brush each finger lightly with a little beaten egg or milk for a golden finish, being careful not to brush the almonds.
  13. Bake for 18-22 minutes, or until golden brown and firm to the touch. Rotate the baking sheet halfway through for even browning.
  14. Let the cheese straws cool on the baking sheet for 5 minutes, then transfer to a cooling rack to crisp up.

Notes

Keep everything cold for flaky results. Grate your own cheese for best texture. Make knuckle indentations deep enough as they puff during baking. For best results, refrigerate shaped unbaked straws if kitchen is warm. Can be frozen unbaked for up to a month.
