A stunning yet incredibly easy holiday appetizer featuring warm, melty brie on flaky puff pastry with tart cranberry sauce. Ready in just 5 minutes of active prep, this crowd-pleasing board looks like you spent hours but comes together in no time.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 1 small wheel brie cheese (about 8 ounces), preferably double-cream
  • 1/3 cup cranberry sauce (homemade or canned; jellied preferred)
  • 2 tablespoons chopped pecans or walnuts (optional)
  • 1 tablespoon honey (optional, for drizzling)
  • Fresh rosemary or thyme sprigs for garnish
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Line your baking sheet with parchment paper.
  2. Unfold your thawed puff pastry sheet on a lightly floured surface. Cut it into four equal squares.
  3. Place the puff pastry squares on the prepared baking sheet, spacing them about 2 inches apart. Using a sharp knife, score a border about 1/2 inch from the edge of each square. Be careful not to cut all the way through—just a shallow score.
  4. Prick the center of each square several times with a fork to prevent it from puffing up too much.
  5. Bake the puff pastry squares for 10-12 minutes, until they’re golden brown and puffed.
  6. While the pastry bakes, cut your brie into slices about 1/4 inch thick. Leave the rind on.
  7. Remove the pastry from the oven and let it cool for exactly 2 minutes.
  8. Press down the center of each pastry square gently with the back of a spoon to create a slight well. Arrange the brie slices on top, dividing evenly among the four squares. Spoon about 1 tablespoon of cranberry sauce over each portion of brie.
  9. Return the baking sheet to the oven for 3-4 more minutes, just until the brie starts to soften and get melty.
  10. Remove from oven and let rest for 1 minute. Transfer each pastry square to your serving board using a spatula. Sprinkle with chopped nuts if using, add a drizzle of honey, and garnish with fresh herb sprigs. Finish with a pinch of flaky sea salt.

Notes

Thaw puff pastry properly: overnight in the fridge or 30-40 minutes on the counter. It should be pliable but still cold. Don’t overwork the pastry. Score, don’t cut through the border. Let brie sit at room temperature for 15-20 minutes before slicing for best melting. The two-minute rest after initial bake is crucial to prevent soggy pastry. For make-ahead: bake pastry squares up to 4 hours ahead, then add toppings and bake 3-4 minutes before serving.
