  • ½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 23 green onions, sliced
  • Optional toppings: crumbled bacon, diced celery, extra ranch or blue cheese dressing, blue cheese crumbles

Instructions

  1. Cook the sweet potatoes: Wash and dry 4 medium sweet potatoes. Pierce each one several times with a fork. Place on a microwave-safe plate and microwave on high for 8-10 minutes, flipping halfway through, until fork-tender. Let cool for 2-3 minutes.
  2. Prepare the buffalo chicken: While potatoes cook, shred 2 cups cooked chicken into a medium bowl. In a small bowl, whisk together ½ cup buffalo sauce and 2 tablespoons melted butter. Pour over chicken and toss until coated.
  3. Split the potatoes: Once cool enough to handle, cut a slit lengthwise down the center of each potato without cutting all the way through. Gently squeeze ends to open. Fluff insides with a fork.
  4. Stuff the potatoes: Divide buffalo chicken evenly among potatoes. Sprinkle each with about 2 tablespoons shredded cheese.
  5. Optional broil step: Place stuffed potatoes on a baking sheet and broil on high for 1-2 minutes until cheese is bubbly and golden. Watch closely.
  6. Add toppings: Drizzle with ranch or blue cheese dressing. Sprinkle with sliced green onions and any other desired toppings. Serve immediately.
