These Quick Cranberry Brie Bites are the perfect last-minute appetizer, combining flaky puff pastry, warm melted brie, and sweet-tart cranberry sauce. Ready in under 15 minutes, they’re a crowd-pleaser for any occasion.

  • 1 package puff pastry sheets, thawed
  • 8 ounces (225g) brie cheese
  • ½ cup (120ml) cranberry sauce (whole berry or jellied)
  • 1 tablespoon fresh rosemary, finely chopped (optional)
  • 1 large egg + 1 tablespoon water (for egg wash)
  • Flaky sea salt (optional, for sprinkling)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Thaw the puff pastry. If forgotten, let it sit on the counter for about 30 minutes until cold but pliable.
  3. Cut the wheel of brie into 24 small cubes, about ½ inch (1.25 cm) each. If too soft, freeze for 10 minutes first.
  4. Unfold the thawed pastry sheet onto a lightly floured surface. Cut into 24 equal squares, about 2 inches (5 cm) each.
  5. Place the pastry squares on the prepared baking sheet, spacing them about 1 inch apart. Press each square gently to flatten slightly.
  6. Place one cube of brie in the center of each square. Top with about ½ teaspoon of cranberry sauce.
  7. Sprinkle a tiny pinch of chopped rosemary over each bite. Fold the corners of the pastry up over the filling, but don’t seal completely.
  8. In a small bowl, whisk together the egg and water. Using a pastry brush, lightly coat the exposed pastry edges. Sprinkle a tiny pinch of flaky sea salt on top if using.
  9. Bake for 12-15 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  10. Let them rest on the baking sheet for 2-3 minutes before serving.

Notes

Don’t overfill the pastry to avoid sogginess. Keep puff pastry cold for best flakiness. Use parchment paper for easy cleanup. Toast rosemary first for more flavor. Can be assembled up to 4 hours in advance and refrigerated. Freeze unbaked bites for up to 2 months.
