A quick and easy buffalo chicken dip perfect for Halloween parties. Made with simple ingredients like canned chicken, cream cheese, and buffalo sauce, this crowd-pleasing appetizer comes together in under 15 minutes of prep and is sure to be a hit.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 2 cans (12.5 oz each) canned chicken, drained
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 3–4 green onions, sliced
  • Tortilla chips, celery sticks, carrot sticks, or baguette slices for serving

Instructions

  1. Preheat your oven to 375°F (190°C). If you haven’t already, let the cream cheese come to room temperature or microwave it for 10-15 seconds until soft.
  2. Drain the canned chicken thoroughly using a fine-mesh strainer, pressing down with a spoon to remove excess liquid.
  3. In a large mixing bowl, combine the softened cream cheese, buffalo sauce, and ranch dressing. Mix with a hand mixer or wooden spoon until smooth and well combined.
  4. Add the drained chicken, 1 cup of shredded cheddar, the mozzarella, and most of the green onions (reserve some for garnish). Stir until evenly mixed.
  5. Transfer the mixture to an 8×8 inch baking dish (or similar size) and spread into an even layer.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  7. Bake for 20-25 minutes, until the dip is hot and bubbly and the cheese on top is melted and slightly golden. For a browner top, broil for the last 2 minutes, watching carefully.
  8. Let the dip rest for 5 minutes before serving. Garnish with reserved green onions and serve with tortilla chips, celery, carrots, or baguette slices.

Notes

For a milder dip, use 1/3 cup buffalo sauce. For extra heat, use 3/4 cup. The dip can be assembled up to 24 hours in advance (without the top cheese layer) and refrigerated. Add 5-10 minutes to baking time if starting from cold. For parties, double the recipe and use a 9×13 inch baking dish. To keep warm for hours, make in a slow cooker on low for 2-3 hours.
