These forgotten cookies are light, airy meringues with melted chocolate chips inside. Made with just three ingredients and a unique ‘forgotten’ method, they’re perfect for late-night cravings or effortless entertaining.

Ingredients

Scale
  • 3 large egg whites, room temperature
  • ¾ cup (150g) granulated sugar
  • 1 cup (175g) semi-sweet chocolate chips
  • ½ teaspoon vanilla extract (optional)
  • ¼ teaspoon cream of tartar (optional)
  • Pinch of salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Separate your eggs, ensuring no yolk gets into the whites.
  4. Pour the egg whites into a clean, dry mixing bowl.
  5. Beat the egg whites on medium speed until frothy and soft peaks form, about 2-3 minutes.
  6. Gradually add the sugar, 1 tablespoon at a time, beating on medium-high until thick, glossy, and stiff peaks form, about 5-7 minutes.
  7. Fold in the chocolate chips (and optional vanilla, cream of tartar, or salt) using a rubber spatula.
  8. Drop spoonfuls of meringue onto the prepared baking sheet, using about 2 tablespoons per cookie, spaced 1 inch apart.
  9. Place the baking sheet in the oven and immediately turn the oven OFF. Close the door and do not open it.
  10. Let the cookies sit in the closed oven for at least 6 hours or overnight, until dry on the outside and easily lifted off the parchment.

Notes

Room temperature eggs are essential for proper whipping. Humidity can affect texture; on humid days, leave cookies in the turned-off oven for an extra 2-3 hours. For vegan version, use aquafaba (3 tablespoons per egg white). Store in an airtight container at room temperature for up to 1 week, or freeze for up to 3 months.
