Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the acorn squash: Using a sharp knife, carefully cut the squash in half from stem to tip. Scoop out the seeds and stringy pulp with a spoon. Place each half cut-side down on your cutting board and slice into 1-inch thick half-moons.
  3. Season the squash: Place the squash slices on your baking sheet. Drizzle with olive oil, then sprinkle with salt and pepper. Use your hands to toss everything together, making sure each piece gets coated. Spread them out in a single layer with a little space between each slice.
  4. Roast the squash: Slide the baking sheet into the preheated oven and roast for 20 minutes. Halfway through, flip each piece with a spatula. Roast until deep golden brown edges and a fork slides in easily, about 20-25 minutes total.
  5. Make the maple brown butter glaze while the squash roasts: Place the butter in a small saucepan over medium heat. Stir occasionally as it melts, then watch closely as it starts to foam.
