These roasted delicata squash rings are a quick and easy side dish that tastes like fall. With caramelized edges and a glossy maple butter drizzle, they’re perfect for weeknights or special occasions.

  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 3 tablespoons unsalted butter
  • 2 tablespoons pure maple syrup
  • 1 tablespoon heavy cream (optional)
  • Flaky sea salt (for finishing)

Instructions

  1. Preheat your oven to 425°F (220°C). Place a rack in the middle position.
  2. Wash the delicata squash well. Cut off both ends (about ¼ inch from each tip) and discard. Slice the squash crosswise into ½-inch thick rings.
  3. Using a small spoon or your fingers, gently push the seeds and stringy pulp out of each ring.
  4. Place the squash rings in a medium mixing bowl. Drizzle with olive oil, then sprinkle with kosher salt and black pepper. Use your hands to toss everything together, making sure each ring is lightly coated.
  5. Line a rimmed baking sheet with parchment paper. Place the squash rings in a single layer, making sure they don’t overlap.
  6. Roast for 20-25 minutes. At the 15-minute mark, flip each ring using tongs. Return to the oven and roast for another 5-10 minutes, until both sides are deeply golden and the rings are tender when pierced with a fork.
  7. While the squash roasts, make the maple butter: In a small saucepan over medium-low heat, combine the unsalted butter and pure maple syrup. Stir occasionally until the butter is fully melted and the mixture is smooth, about 2-3 minutes. Remove from heat and whisk in the heavy cream if using.
  8. Transfer the roasted squash rings to a serving platter. Drizzle the warm maple butter over the top. Sprinkle with flaky sea salt. Serve immediately.

Don’t skip the high heat (425°F) for caramelized edges. Slice evenly (½ inch) for consistent cooking. Don’t overcrowd the pan to avoid steaming. Flip halfway through for even browning. Make the maple butter while the squash roasts to save time. Start checking at 20 minutes to avoid overcooking.
