These Quick Spooky Deviled Eggs with Black Olive Spiders are creamy, tangy, and just the right amount of creepy for Halloween. They come together in about 20 minutes using simple ingredients, making them perfect for parties or a fun weeknight dinner surprise.

Ingredients

Scale
  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1 can (6 ounces) large black olives
  • 1 tablespoon cream cheese, softened

Instructions

  1. Boil the eggs: Place eggs in a single layer in a saucepan, cover with cold water by about an inch. Bring to a rolling boil over high heat. Cover, turn off heat, and let sit for exactly 10 minutes.
  2. Ice bath: While eggs sit, fill a bowl with ice and cold water. After 10 minutes, transfer eggs to ice bath using a slotted spoon. Let chill for at least 5 minutes. Gently crack eggs before placing in ice bath for easier peeling.
  3. Peel the eggs: Tap eggs all over to crack shell, roll between palms to loosen. Start peeling from the wider end. Rinse off shell bits.
  4. Slice and separate: Slice each egg in half lengthwise. Pop yolks into a mixing bowl. Arrange white halves on serving platter, cut side up.
  5. Make the filling: Add mayonnaise, mustard, vinegar, salt, and pepper to yolks. Mash with a fork until completely smooth and creamy.
  6. Fill the eggs: Spoon filling into a piping bag or zip-top bag, snip off a small corner, and pipe filling into each egg white half. Alternatively, use a small spoon.
  7. Make the spiders: Drain olives and pat dry. For each spider, slice one olive in half lengthwise for the body. Slice another olive crosswise into thin rounds (6-8 per spider) for legs. Use a tiny dab of cream cheese to attach leg slices to the body. Gently press spider onto filled egg.
  8. Finish and serve: Lightly sprinkle filled eggs with smoked paprika. Arrange on platter and serve immediately or refrigerate until ready to serve.

Notes

Use eggs at least a week old for easier peeling. For perfect hard-boiled eggs, bring to a boil, cover, turn off heat, and let sit for 10 minutes. The olive spiders can be made with a tiny dab of cream cheese to help legs stick. Store leftovers in an airtight container in the refrigerator for up to two days. Do not freeze.
