These sparkling champagne jello shots are a sophisticated twist on a party classic, featuring a light, bubbly texture with a pop of tart raspberry. Perfect for New Year’s Eve celebrations, they’re quick to make and always a crowd-pleaser.

Ingredients

Scale
  • 1 cup sparkling champagne or prosecco (chilled)
  • 1 cup fruit juice (raspberry or pomegranate recommended, 100% juice)
  • 3 tablespoons granulated sugar (adjust to taste)
  • 2 packets unflavored gelatin powder (about 2 tablespoons, Knox brand recommended)
  • Optional: 1-2 tablespoons vodka or berry liqueur (e.g., Chambord)
  • Edible glitter or gold leaf flakes (optional, for garnish)

Instructions

  1. Prepare your shot cups. Arrange 12 to 14 plastic shot cups on a baking sheet. If using lids, set them aside.
  2. Bloom the gelatin. Pour 1/2 cup of the fruit juice into a small bowl. Sprinkle the 2 packets of unflavored gelatin powder evenly over the surface. Do not stir. Let it sit for 5 minutes until it becomes a firm, wobbly mass.
  3. Heat the remaining juice. In a small saucepan, combine the remaining 1/2 cup of fruit juice and the 3 tablespoons of sugar. Heat over medium-low heat, stirring occasionally, until the sugar dissolves and the mixture is warm but not boiling—about 2 to 3 minutes.
  4. Combine the gelatin mixture. Remove the saucepan from heat. Add the bloomed gelatin to the warm juice mixture. Whisk gently until the gelatin is fully dissolved and the mixture is smooth, about 1 minute.
  5. Add the champagne. Let the juice-gelatin mixture cool for 2 to 3 minutes. Slowly pour in the 1 cup of chilled champagne, whisking gently as you go. Pour it down the side of the saucepan to preserve some bubbles. If adding vodka or liqueur, stir it in now.
  6. Pour into cups. Transfer the mixture to a pitcher or spouted measuring cup. Carefully pour into the prepared shot cups, filling each about 3/4 full. If using edible glitter, sprinkle a tiny pinch on top of each cup now.
  7. Refrigerate until set. Place the baking sheet with the filled cups in the refrigerator. Let them set for at least 4 hours, but overnight is better. Do not disturb them during this time.
  8. Serve chilled. Once set, the jello shots should be firm but slightly wobbly. They can be popped out of cups for serving on a platter or left in cups. Add a final sprinkle of edible glitter just before serving.

Notes

Use a dry or brut champagne for best texture. Let the juice mixture cool before adding champagne to preserve bubbles. For best results, make the night before serving. Do not freeze.
