These Frankenstein Guacamole Bites are a fun, quick, and easy Halloween appetizer made with creamy guacamole piped onto cucumber rounds and decorated like little monsters. Perfect for parties or a festive snack, they come together in under 20 minutes with simple ingredients.

Ingredients

Scale
  • 3 large ripe avocados (Hass preferred)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons Greek yogurt (or dairy-free coconut yogurt)
  • ½ teaspoon fine sea salt (or to taste)
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 1 large English cucumber
  • ¼ cup sliced black olives (e.g., Lindsay or California Ripe)
  • Tortilla chips (for serving, e.g., Juanita’s)
  • Small piece red bell pepper (for bolts)
  • Cilantro (optional, for garnish)

Instructions

  1. Make the guacamole base: Cut avocados in half, remove pits, and scoop flesh into a medium mixing bowl. Add lime juice, Greek yogurt, salt, pepper, and garlic powder. Mash with a fork until smooth but still slightly chunky. Taste and adjust seasoning.
  2. Prepare the cucumber bases: Slice English cucumber into ½-inch thick rounds (about 12–15 rounds). Pat dry with a paper towel to remove excess moisture.
  3. Assemble the piping bag: Spoon guacamole into a piping bag or a zip-top bag. If using a zip-top bag, squeeze guac into one corner and snip off about ¼ inch from the tip.
  4. Pipe the guacamole: Pipe a small mound of guacamole (about ½ inch tall) onto each cucumber round. Smooth the top slightly with the back of a spoon if needed.
  5. Create the Frankenstein faces: Place two sliced black olives for eyes, slightly angled inward. Use a small sliver of olive for the mouth (straight line or slight zigzag). Add two small pieces of red bell pepper on the sides of the head for bolts. Use a tiny dab of guacamole to stick them on if needed.
  6. Garnish and serve: Sprinkle a few cilantro leaves on the platter around the bites. Serve immediately with tortilla chips on the side.

Notes

Don’t make these too far in advance; cucumber releases water and guacamole browns. To prep ahead, make guacamole and slice cucumber separately, then assemble right before serving. Guacamole stays green for about 2 hours if plastic wrap is pressed directly onto the surface. For dairy-free, swap Greek yogurt with dairy-free coconut yogurt or omit. For spicy version, add finely chopped jalapeño or hot sauce to guacamole.
