A vibrant, creamy guacamole with a spooky green glow, perfect for Halloween parties. Made with fresh avocados, spinach, lime, and a hint of jalapeño, this crowd-pleasing dip is quick, easy, and irresistibly delicious.

Ingredients

Scale
  • 4 ripe avocados
  • 1 cup fresh spinach leaves, packed
  • 1/4 cup fresh lime juice (about 2–3 limes)
  • 1/2 cup finely diced red onion
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 Roma tomato, seeded and diced (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin (optional)

Instructions

  1. In a small blender or food processor, combine the packed spinach leaves and fresh lime juice. Blend until completely smooth, about 30 seconds. Set aside.
  2. Dice the red onion, mince the jalapeño (remove seeds for milder heat), chop the cilantro, mince the garlic, and dice the tomato if using.
  3. Slice each avocado in half lengthwise, remove the pit, and scoop the flesh into a large mixing bowl.
  4. Using a fork or potato masher, mash the avocado to your desired consistency (about 75% smooth and 25% chunky).
  5. Pour the blended spinach and lime mixture over the mashed avocado. Stir gently until the color is uniform.
  6. Add the diced red onion, minced jalapeño, chopped cilantro, minced garlic, diced tomato (if using), salt, pepper, and optional cumin. Fold together until evenly distributed. Taste and adjust seasoning.
  7. For best flavor, let the guacamole sit at room temperature for 10-15 minutes before serving.
  8. Transfer to a serving bowl. Garnish with whole cilantro leaves, red pepper flakes, or pumpkin seeds. Serve with tortilla chips, vegetable sticks, or as a topping.

Notes

For the best texture, use perfectly ripe Hass avocados. The spinach adds a vibrant green color and helps prevent browning. If making ahead, press plastic wrap directly onto the surface of the guacamole before refrigerating. Let it sit at room temperature for 15 minutes before serving. For a spicier version, leave the seeds in the jalapeño or add an extra pepper.
