This creamy, tangy, and spicy Buffalo chicken dip is made in the slow cooker with minimal effort. It’s the perfect crowd-pleaser for game days, potlucks, or cozy nights in, and it even converted a decade-long skeptic.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (about 2 large chicken breasts or 1 rotisserie chicken)
  • 8 ounces cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup Buffalo hot sauce (such as Frank’s RedHot)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup blue cheese crumbles, plus extra for garnish
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Celery sticks and carrot sticks for serving
  • Tortilla chips or kettle-cooked potato chips for serving
  • Crusty bread or baguette slices for serving

Instructions

  1. Shred the chicken: If using rotisserie chicken, remove the skin and shred the meat using two forks or a hand mixer. If cooking your own, poach 2 large chicken breasts in salted water for 15-18 minutes until cooked through, then shred while warm.
  2. Soften the cream cheese: Cut the cream cheese into small cubes and let sit at room temperature for about 30 minutes.
  3. Combine the wet ingredients: In a medium mixing bowl, whisk together the softened cream cheese, ranch dressing, and Buffalo hot sauce until smooth.
  4. Add the seasonings: Stir in the garlic powder, onion powder, and a pinch of black pepper. Taste and adjust if needed.
  5. Layer in the slow cooker: Lightly grease a 3- to 4-quart slow cooker. Spread half of the shredded chicken evenly across the bottom. Pour half of the cream cheese mixture over the chicken, then sprinkle with half of the shredded cheddar and half of the blue cheese crumbles. Repeat the layers with the remaining chicken, cream cheese mixture, cheddar, and blue cheese. Do not stir.
  6. Cook on low: Cover and cook on low for 2 hours. Do not lift the lid during the first hour. After 2 hours, stir gently until everything is well combined and smooth. If too thin, cook uncovered for another 15-20 minutes.
  7. Adjust the seasoning: Taste and add more hot sauce, blue cheese, or salt as needed.
  8. Garnish and serve: Sprinkle remaining blue cheese crumbles and chopped chives or green onions on top. Serve warm directly from the slow cooker or transfer to a serving bowl with celery sticks, carrot sticks, tortilla chips, and crusty bread.

Notes

For best results, use full-fat cream cheese and freshly shredded cheddar. Let the cream cheese come to room temperature to avoid lumps. If the dip becomes too thick after cooling, stir in a splash of milk or chicken broth when reheating. This dip tastes even better the next day.
