Christmas Morning Cinnamon Roll Casserole - featured image

This easy overnight cinnamon roll casserole uses refrigerated cinnamon rolls and a creamy custard to create a soft, caramelized breakfast that tastes like you spent hours on it. Perfect for a stress-free Christmas morning.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with cream cheese icing
  • 6 large eggs, room temperature
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • Reserved cream cheese icing from the cinnamon roll cans
  • 2 tablespoons unsalted butter, melted
  • Optional: 1/4 cup chopped pecans or walnuts

Instructions

  1. Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Open both cans of cinnamon rolls. Set the icing aside. Cut each cinnamon roll into quarters using kitchen shears or a sharp knife.
  3. Arrange the pieces in the baking dish in an even layer. If adding nuts, sprinkle them over the top now.
  4. In a large mixing bowl, whisk together the eggs, heavy cream, milk, sugar, vanilla, cinnamon, nutmeg, and salt until fully combined and slightly frothy.
  5. Pour the custard over the cinnamon roll pieces, making sure every piece is coated. Press down any pieces sticking up with a spatula.
  6. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate for at least 6 hours or overnight.
  7. Preheat oven to 350°F (175°C). Remove the casserole from the fridge while the oven heats up.
  8. Brush the top of the casserole with melted butter.
  9. Bake for 35-40 minutes, until the top is golden brown and the center is set but still slightly jiggly. If the top browns too quickly, tent with foil for the last 10 minutes.
  10. Let the casserole rest for 5 minutes.
  11. Warm the reserved icing in the microwave for 10-15 seconds until pourable. Drizzle generously over the casserole.
  12. Serve immediately, scooping portions with a large spoon.

Notes

Don’t rush the soaking time—at least 6 hours is crucial for the cinnamon rolls to absorb the custard. Use room temperature eggs to prevent lumpy custard. Let the casserole rest for 5 minutes after baking to set properly. For a dairy-free version, use canned coconut cream and plant-based milk. To reduce sugar, cut granulated sugar to 2 tablespoons.
